Watermelon Mint Sno-Cones

  So, it turns out today is National Watermelon Day! I had no idea when my little person and I picked our VERY FIRST homegrown watermelon from the garden yesterday afternoon.

There was just something extra sweet as we bit into the firm, pink flesh, knowing that it had come out of our soil. My plan was to have so many melons that I’d be able to drop them off on friends’ and neighbors’ doorsteps around the county, but most of the best ones were eaten by the bugs or suffered some other misfortune before they were ripe enough to pick. whomp whomp.

Also, ALLLLLL summer long the ONLY two things my uber pregnant self have craved have been ice water and ice cold watermelon. I’m guessing that I bought at least one melon a week for 3 months and nearly ate the whole thing every week BY MYSELF. But now I have MY OWN from MY Garden!

Then I got even greedier… I couldn’t STAND the thought of wasting all that sweet thin layer of fruit and juice that got thrown away with the rind after I’d scooped out everything I could get with a melon-baller. Solution: Homemade New Orleans Style Sno-cones. There’s really nothing that my family likes better in the summertime. We probably go to the sno-cone stand once a week around here.

It’s been that way since high school, when I spent nearly every summer night with a posse of friends standing around outside the local Sno-Biz waiting for the cute guys to finish work there so we could all go out night-swimming or to a late movie. Even now, when I taste a sno-cone I still remember how hot it was and how excited my 16 year old self was when one of those guys would pass me a free sno-cone. (obviously, they had a crush on me as big as the one I had on them, right? ha! unlikely…but 16 year old Biz dreamed.)

Anyway, to do this at home, all it takes is a little mint simple syrup, a lot of leftover watermelon juice, an ice cream  maker and YOWZA. (If I weren’t preggo you can BET YOUR BISCUITS that some tequila or vodka would find its way into one of these babies.)

Watermelon season is winding down, but this super simple recipe is well worth it with the dregs of that one sitting in your fridge right now! The hard part will be NOT eating the entire bowl full. (but it’s homemade and fresh, right, so what’s the harm?)

Watermelon Mint Sno-Cones

What You Need
  • 4 Cups watermelon juice, chilled
  • 1 Cup granulated sugar
  • 1 Cup water
  • Crushed leaves from 8 mint stalks (so, about ¾ Cup mint leaves)
  • 1 Lime, cut into wedges
What to Do
  1. FOR THE WATERMELON JUICE
  2. Take leftover watermelon juice after using a melon baller and the leftover flesh scooped from the rind and puree, then strain, or just puree'/strain watermelon chunks.
  3. Chill in the refrigerator for at least 1 hour if not already cold.
  4. FOR THE MINT SIMPLE SYRUP
  5. In a small saucepan, boil the water.
  6. When it is rolling, add in the sugar and turn to simmer until it has thickened slightly (2 minutes or so)
  7. Remove from heat and add the mint leaves to steep for 10 minutes.
  8. Strain the leaves from the syrup and store in a jar.
  9. Refrigerate until cool.
  10. FOR THE SNO-CONE
  11. In an ice cream maker, combine the 4 cups chilled watermelon juice and 1 cup of the simple syrup
  12. Freeze using your ice cream maker's specifications.
  13. It's ready when it is fully frozen but NOT lumpy-frozen. that's almost too hard.
  14. Serve with a large lime wedge squeezed over the top.

Sister’s Banana Bread

Everybody down south knows about Sister Shubert… her orange rolls, cinnamon rolls, and yeast rolls are in EVERY grocery freezer in EVERY town and have been served by just about everybody at some point or another. My college roommate spoke about her in VERY reverent and hushed tones. 😉 I knew she was a big deal down here, but what I didn’t know is that Sister is an honest-to-goodness actual lady and that she is generous, and thoughtful, and all around lovely.

I came to know this because my Aunt, Uncle, and Grandmother lived in her hometown of Andalusia, Alabama for many years. My aunt couldn’t say enough wonderful things about Sister (actually, truly what she’s called), and when my grandmother died, rather than just bringing a regular casserole or fruit salad, she shipped us The. Biggest. Box. of frozen baked goods you’ve ever seen. I’m pretty sure that box alone fed my family for a month.

Anyway, she’s so generous that she also shares her recipes for yeast rolls, cinnamon rolls, and other breads in two (1) (2) pretty wonderful cookbooks. (The REAL recipes y’all. They WORK!)

Finally, after living in our new house for two months, my cookbooks got unpacked the other day. This meant I could FINALLY get my hands on them. I could hardly stand it I wanted to cook something so bad. Thankfully, we had a big bunch of frozen bananas that were WAY past their prime, so I pulled out Sister’s cookbook and tried her version of banana bread. It was a hit with my little person (and everyone else for that matter) AND it gave him a chance to stir, stir, stir. I modified the recipe a TEENY bit,  (no nuts, butter rather than shortening) but you could do it her way and it would still be divine! Let me know if you make it!

Sister's Banana Bread

Serves: 2 loaves
What You Need
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter
  • 1 cup sugar
  • 2 large eggs
  • 1½ cups mashed overripe bananas
  • ½ teaspoon vanilla
What to Do
  1. Preheat your oven to 325ºF.
  2. Butter ad flour two 8x4 inch loaf pans so you're ready when the batter is ready.
  3. Combine flour, baking soda and salt; set aside.
  4. Beat the butter using an electric mixer until its creamy; gradually add sugar until totally incorporated and fluffy.
  5. Add the eggs, one at a time, beating them in just until yellow disappears after each addition.
  6. Add the banana puree' and vanilla; beat until blended.
  7. Gradually add the dry flour mixture, (1/2 cup by ½ cup works well) beating just until blended
  8. Pour batter into the pans.
  9. Bake for 1 hour or until you can put a toothpick in the middle and it comes out clean.
  10. Cool in pans on wire racks 10 minutes

Sweet Potato Shells

img_4204   We’d hit another picky period with my little person… if it’s not catfish, shrimp, (whaaat?) pasta or potatoes, he’s not interested. I mean, can I blame him? Nah. BUT I’ve seriously been sweating bullets about what to feed him vegetable-wise.

THEN, I realized that sweet potatoes have been a big hit in the past and WHAT IF I COMBINED THEM with pasta?!?

It worked. He had thirds of this recipe and asked for it a few days later… plus, it can be made in big batches and refrigerated so you can have it for a whole week… if you’re into eating the same thing for a whole week. 😉

IMG_3553Once upon a time Shirley, my mother in law, baked amazing cakes and other delicious treats as a side hustle from her home, and now she just makes them for people she loves and on special occasions. Dubs had a gorgeous coconut cake for his first birthday, the Christmas cookie spread is INCREDIBLE at their house, (plus homemade beignets are a Christmas morning tradition!) and Saturday morning banana bread or sour dough bread toast is a thing that you just don’t want to miss.

Quick, Easy, Elegant supper. Fig, Balsamic Pork Chops

IMG_3424Fig week is technically over, but I couldn’t give up on them just yet. I still had a half pint that I wanted to use, and then when I made this sauce for supper liked the result so much that I took pictures. While I had a honey and a toddler sitting at the table slightly (ok, very) impatient to dig in. It wasn’t my finest moment.

But they waited while I frantically grabbed my camera and put the plates on the table… and then my 2 year old said “Mama! I DON’T WANT YOU TO TAKE A PICTURE OF SUPPER!” and made a frowny-pouty-irritated face. “I’m FRUSTRATED!” he said, a very descriptive emotional word that sounds silly coming out of a 2.5 year old’s mouth, except no truer words have ever been spoken because what 2.5 year old isn’t frustrated 75% of the time?

I know when I’m in the wrong, and when I’ve gone overboard, and stopping everything at 6:15pm on a Friday night when you’re having family supper to take pictures of the plate for this blog is definitely one of those times.

Wild berry Cobbler.

So, I’d been in kind of a cooking rut lately… I’ve been spending so much time thinking about our home that we’re renovating/building out at our family farm that I just hadn’t had much creative energy to expend in the kitchen… There was a lot of “Oh! Wagner! You’re going to have chicken tenders AGAIN tonight! Won’t those be delicious??” and “I think I just want watermelon and coffee for lunch today.” Ugh. Cooking’s not as much fun when there aren’t fun things to cook, you know?IMG_2881

But then, last week, that all changed.  Our new, wonderful forager friend brought me two quarts of mulberries and a quart of dewberries and I basically died and went to berry heaven. I had SO many ideas for using these tart, sweet, perfect little treasures and not enough time to make them. You’ve hopefully already seen (and tried!) the mulberry scones recipe, and then that very same night, my daddy requested a cobbler. That seemed the PERFECT way to use the berries but not overwhelm their natural perfection… so he got his wish. Each of us had a personal sized one piping hot after supper, with OF COURSE, homemade vanilla ice cream.

Don’t have your own forager friend or a mulberry tree in your backyard? No worries. A combo of fresh or frozen blueberries and raspberries will do the trick. Your tummy will thank you.

Freeze State of Jones: Chocolate Mint Ice Cream Sandwiches

When I was a kid, the ice cream truck (called The Bootsy Wagon) would drive around our neighborhood maybe once a week in the summer, and I would FREAK OUT. I never had money–I mean, I was outside playing in the dirt. What seven year old has money in that situation?– and it would inevitably speed by my house too fast for me to get it to stop, but when I did catch it I’d get a mickey mouse bar or chocolate-vanilla ice cream sandwich and eat it as it dripped down my fingers and chin.

Pure summer kid joy.

Brett would giggle and didn’t believe that the Ice Cream truck company was called the Bootsy Wagon, (He thought my references to it were some folksy, Mississippi way of saying “Ice Cream Truck” like I say “buggy” instead of grocery cart.) Then he read in a corporate donor report that The Bootsy Wagon was a Mississippi Black Owned Business based in Ellisville, Mississippi. 😉 Vindicated.

Anyway, since I started making my homemade ice cream six years ago, I’ve been nursing this crazy unlikely dream that one day I’ll own a tiny ice cream truck and be able to bring joy and happiness to children in the summertime.

I don’t know about all that (yet.) but I DO know that I’m having some progress on the portable ice cream sandwich situation… This chocolate-mint ice cream sandwich is WHERE it’s AT. Make them knowing full well you’ll want to eat them all in one sitting.
