Watermelon Mint Sno-Cones

August 3, 2017 by biz.w.harris@gmail.com 1 Comment

So, it turns out today is National Watermelon Day! I had no idea when my little person and I picked our VERY FIRST homegrown watermelon from the garden yesterday afternoon.

There was just something extra sweet as we bit into the firm, pink flesh, knowing that it had come out of our soil. My plan was to have so many melons that I’d be able to drop them off on friends’ and neighbors’ doorsteps around the county, but most of the best ones were eaten by the bugs or suffered some other misfortune before they were ripe enough to pick. whomp whomp.

Also, ALLLLLL summer long the ONLY two things my uber pregnant self have craved have been ice water and ice cold watermelon. I’m guessing that I bought at least one melon a week for 3 months and nearly ate the whole thing every week BY MYSELF. But now I have MY OWN from MY Garden!

Then I got even greedier… I couldn’t STAND the thought of wasting all that sweet thin layer of fruit and juice that got thrown away with the rind after I’d scooped out everything I could get with a melon-baller. Solution: Homemade New Orleans Style Sno-cones. There’s really nothing that my family likes better in the summertime. We probably go to the sno-cone stand once a week around here.

It’s been that way since high school, when I spent nearly every summer night with a posse of friends standing around outside the local Sno-Biz waiting for the cute guys to finish work there so we could all go out night-swimming or to a late movie. Even now, when I taste a sno-cone I still remember how hot it was and how excited my 16 year old self was when one of those guys would pass me a free sno-cone. (obviously, they had a crush on me as big as the one I had on them, right? ha! unlikely…but 16 year old Biz dreamed.)

Anyway, to do this at home, all it takes is a little mint simple syrup, a lot of leftover watermelon juice, an ice cream  maker and YOWZA. (If I weren’t preggo you can BET YOUR BISCUITS that some tequila or vodka would find its way into one of these babies.)

Watermelon season is winding down, but this super simple recipe is well worth it with the dregs of that one sitting in your fridge right now! The hard part will be NOT eating the entire bowl full. (but it’s homemade and fresh, right, so what’s the harm?)

What You Need
  • 4 Cups watermelon juice, chilled
  • 1 Cup granulated sugar
  • 1 Cup water
  • Crushed leaves from 8 mint stalks (so, about ¾ Cup mint leaves)
  • 1 Lime, cut into wedges
What to Do
  1. FOR THE WATERMELON JUICE
  2. Take leftover watermelon juice after using a melon baller and the leftover flesh scooped from the rind and puree, then strain, or just puree'/strain watermelon chunks.
  3. Chill in the refrigerator for at least 1 hour if not already cold.
  4. FOR THE MINT SIMPLE SYRUP
  5. In a small saucepan, boil the water.
  6. When it is rolling, add in the sugar and turn to simmer until it has thickened slightly (2 minutes or so)
  7. Remove from heat and add the mint leaves to steep for 10 minutes.
  8. Strain the leaves from the syrup and store in a jar.
  9. Refrigerate until cool.
  10. FOR THE SNO-CONE
  11. In an ice cream maker, combine the 4 cups chilled watermelon juice and 1 cup of the simple syrup
  12. Freeze using your ice cream maker's specifications.
  13. It's ready when it is fully frozen but NOT lumpy-frozen. that's almost too hard.
  14. Serve with a large lime wedge squeezed over the top.

Here, Figgy Figgy… Cocktail

Fig Week is wrapping up here at Mess of Greens (though I have ONE more recipe to share next week! I just can’t stop!) but what’s a summer weekend without a libation?

I don’t usually drink bourbon in summertime- I have some weird belief that it’s a fall & winter spirit and that gin and tequila are best for warm weather- but I just knew that the sweetness of a figs syrup would complement the bourbon JUST right.

And it did.

My friend Shelton taught me about the perfection that is Bourbon & Ginger Ale, and this is a nice summer alternative. Fizzy seltzer, sweet fig syrup, warm lovely bourbon. Can you go wrong?

Islands in the Stream: The perfect cocktail for Southern Summer Sipping

Y’all know I’m CRAZY about Dolly Parton, right? I mean, she saves wounded bald eagles, gives libraries of books to children, writes and sings incredible songs, is crazy witty, knows and is totally one-thousand percent comfortable with herself, and is just all around glamourous and adorable…Need I say more?

Well, when you’re as big a fan as me, and she announces the dates of her first tour in YEARS, PLUS you accidentally end up with 3 times as many watermelons than you actually need for the event you’re catering (still working on that..erg.) then AND you and your family  have eaten so much of it that you’re starting to get waterlogged, you figure our something delicious to do with it. AND, of course, make sure to name it after the queen of east Tennessee herself. (waterMELONS, you know?) 😉

Anyway, I hated to see all this nearly overripe watermelon and juice go to waste, so I combined it with a few other juices, my favorite alcohols, and a little cucumber slices, and Voila! The perfect beach or screened in porch cocktail for warm days or nights…named after one of my favorite Dolly performances with Kenny Rogers, Islands in the Stream.

The Juke Joint Cocktail: Walk Me Down

April 21, 2016 by biz.w.harris@gmail.com Leave a Comment

My favorite weekend of the year is Juke Joint Festival weekend…where my bestest buds and I can get our dance on to real, live blues music legends ALL day & night long in venues ranging from a theatre with a canopy of real stars to an old Delta commissary full of memorabilia and farm equipment to famous long-time Juke Joints owned by Delta natives with Blues Music pedigrees.

I also get to gamble with friends on baby pig races (they love oreos and will race around a track to get one… but then again, who wouldn’t?) watch Monkeys riding Dogs herding Sheep (true story) and generally sample all the best food and drink the Delta has to offer.

My friend Griffin wins a Blue Ribbon from the Pig Races

For the past eleven years or so, I’ve only missed 3 or four Juke Joint weekends, and only those for VERY important reasons… I mean, I didn’t even miss the year I had a baby that was a month and half old. I pumped in bathroom stalls and sitting out on a picnic table with a scarf wrapped around me when there WERE no stalls, and called home every hour to check on him… Talk about commitment.

Anyway, this year, since we’ve moved farther south we missed it. All weekend I pouted over my Instagram and Facebook feeds as people posted photos of great bands or delicious food. But rather than JUST pout, I decided to pretend like I was there by putting some great Delta Blues on the record player and mixing up a batch of the unofficial Cocktail of Clarksdale Blues travelers and sponsor of the wildest nights in the world, The Walk Me Down. Click below to read more about this delicious (and dangerous cocktail and find out how to make them yourself).

Giving Margaritas a Run for their Money: Frozen Grapefruit Palomas

April 14, 2016 by biz.w.harris@gmail.com Leave a Comment

IMG_2547I went to Las Vegas a few months after my son was born for a conference, and at the recommendation of my cousin Virginia, ended up at Mesa Grill for supper with my friend Sara and some of her friends. We ate and ate and ate, and then did a little drinking and only a teeny bit of gambling on the black jack tables. The food was truly deeeelish, and the gambling was fun, but it was the cocktail that Sara had me order that I most remember. It was pink, and fizzy, and just right for the hottest of hot desert night… The Paloma.

I’ve been making and ordering them pretty much constantly since then since it’s made from one of my favorite spirits, tequila (See my ode to the margarita here) and is pretty much PERFECT for summer weather down here in the deepest south. Grapefruit soda, Tequila, lime… could it be any more delicious?

Tequila Mockingbird Frozen Margarita

April 1, 2016 by biz.w.harris@gmail.com Leave a Comment

IMG_2311

Oh folks, can you stand it? It’s. Almost. Margarita. Weather.

Margarita weather ALSO means that it’s linen and white clothes weather, drippy fish tacos on the back porch weather,  read your favorite book (To Kill a Mockingbird, obvi) while sitting outside covered in sunscreen and also mosquita spray weather, and, my personal favorite, black cherry-slash-green apple snocone weather.

I didn’t even know that I liked tequila until I tried silver tequila, and then I literally wanted to drink the whole bottle right then and there.

Some of y’all are thinking, oh, oh tequila. no nonononononononooooooo. (because there was that one night when you turned 22 and you went out dancing with your friends at that blues bar and met Morgan Freeman and then took so many shots that you ended up dancing on top of a car while it was driving through downtown at 2.3 mph.. oh wait…)

But before you say “nooooooo” let me FIRST tell you that this has NO sour mix involved AND is a truly refined cocktail for grownups and not at all like the tequila you may or may not have thrown up for two days straight that night in college. 😉

This margarita recipe is refreshing, a little tart, and tingles in all the right places. You get me?

Packing a Punch: Virginia Bourbon Punch

March 1, 2016 by biz.w.harris@gmail.com Leave a Comment

IMG_1919 OH y’all… on weekends like we’ve had, I feel like a little daffodil peeking out of my leaves and praying for more warmth and sunshine. I LOVE winter, but gosh, when the sun is warm and bright after some grey, cold weeks, I just can’t help but get excited for spring.  Yesterday it was so gorgeous and Wagner and I were having so much fun being outside, I called my friend Lauren to come over for a drink on the porch. She couldn’t make it, but I had made a batch of a punch that is JUST RIGHT for warm, sunshiney days, so I had a little sip by myself. 😉 You’ll DEFINITELY want to make your own batch for this weekend, but since it has to steep for a couple of days, make it NOW so you’re ready for your weekend picnic, or porch sitting, or tailgating.

A Toast to Laurel, MS with Mock Champagne!

February 10, 2016 by biz.w.harris@gmail.com Leave a Comment

What are the odds that the year you move back to the town where you grew up that at nearly the SAME TIME an HGTV show pilot is filmed there based around the concept of returning to your hometown?
I know, right? Nope, we’re not on the show in any way, shapem or form, but the show’s host, Erin has designed my gorgeous wedding invitations AND Wagner’s baby announcement (the two pieces of paper I treasure the most in the world), so I do know her a teeny tiny little bit.
Sunday, January 24th at 11am (THIS WEEKEND!) is the air date for Ben and Erin Napier’s HGTV show pilot, Hometown, and is also Laurel, Mississippi’s BIG DEBUT onto the national stage (Followed not long after by Jones County’s big deut with The Free State of Jones movie). The whole town is so excited about this, that there’s a city-wide chili lunch right after the airing at our lovely little train depot. My whole family came back from the beach completely down for the count with some awful flu-ish type virus right now, so it’s not looking like we’ll be able to go, BUT we’re going to drink ALL the orange juice in town between now and then to try to get ourselves well again.
IN THE MEANTIME I’m making sure I don’t miss a chance to celebrate such a big event, so we’re going to be raising a very chaste, very Sunday-morning-Appropriate toast to Laurel, to the Napiers, and to coming home with my Grandmother’s Mock Champagne/Wedding Punch that comes from the classic Laurel Entertains YWCO cookbook (I know. is it Coincidence or fate? Plus my mama did all the gorgeous house illustrations in the book. Whhhaatt?)

The Kentucky Sidecar

February 10, 2016 by biz.w.harris@gmail.com Leave a Comment

It’s Friday, folks. As Mr. Gross, my former Madison Shannon Palmer High School Colleague used to say, it’s FRI-day, so it’s MY-day. 😉 Do yourself a favor and have this delicious cocktail after work. The Kentucky Sidecar is a riff on the classic sidecar but made with Bourbon (sigh..) instead of brandy. Y’all, it’s a no brainer.

This is one of those cocktails that you could drink and drink and drink and drink and drink. It’s smooth, and not super sweet, and light and also, because it’s bourbon and citrus, kind of perfect for warm OR cool weather.

You’re welcome. 😉

What to drink before the parade: Le Roi Cafe’

February 10, 2016 by biz.w.harris@gmail.com Leave a Comment

I LOVE Mardi Gras. I just love it. It turns out that I went a bit overboard this Mardi Gras season…buying King Cake Flavored vodka, and King Cake Flavored coffee… I drew the line at King Cake Flavored soda, but it’s a pretty thin line. But then I realized that most of the drinks people are making with King Cake vodka are just plain terrible and honestly I’m not sure that anyone but 21 year old tourists in New Orleans for the first time ever would drink them. King Cake coffee is pretty delicious, but maybe just a bit too much for everyday consumption.

So what do I do? I make a pre-parade slash post dinner party coffee cocktail (AND a virgin version for festive non-drinkers.) As a nod to KING Cake, I named it Le Roi Cafe.` You’ve had Irish Coffee, right? Well, this just might be better.
