Delta BBQ’d Pecans

When I was in high school, this cute little gift boutique gave me a holiday job wrapping presents. I think I spent most of the money I earned buying these crazy expensive praline pecans that we sold there so I could stuff my face while I worked… typical.But on the upside, I was REALLY able to sell the you-know-what out of those pecans to just about everyone who walked in.

I’m not going to try to do that to you, but I will tell you that these BBQ pecans are mighty fine as a happy hour snack, afternoon pick me up, party-food, or a little nibble between the hours of midnight and the next night at 11pm. They’re just the right amount of salty, crunchy, roasty, and spicy and turn just the most lovely brown color, and also go super well with a robust craft beer or bourbon cocktail.

Plus, they are SUPER easy.

I modified a recipe for BBQ pecans from the Bayou Cuisine cookbook… it didn’t say anything about oil or butter, OR call for any salt… I wasn’t sure the pecans would brown without some butter and I also wanted the texture and additional flavor added by kosher salt. Anyway, I guess if you want you can leave out both of those things, but these turned out so perfectly I kind of wonder if those two things weren’t accidentally left out of the cookbook. (But also, I’ve kind of heard a rumour that some Delta ladies of much earlier generations are notorious for “forgetting” ingredients when sharing them with others, so….) 😉

What You need:

1/2 Heaping Cup of raw, shelled pecan halves

3 Tablespoons of unsalted butter, melted

2-3 Tablespoons Worcestershire sauce

2 Teaspoons (more if you like spicy) chili sauce

Kosher salt to taste

What you do:

Preheat your oven to 300 degrees. Take your raw pecan halves and roll them around in the melted butter.

Pour the worcestershire sauce and hot sauce/chili sauce over them and roll with a spoon until the nuts are fully coated in the mixture. I recommend tasting it to make sure it’s spicy enough for you.
Place pecans on a baking sheet and spread them out evenly.
Sprinkle the salt over them

Bake at 300 for about 20 minutes or until deep brown in color, like so:IMG_1339

Serve with something cold and delicious to drink, and sparkling conversation!
