Riffing on Robert St. John: White Bean & Ham Stufato

Have you ever eaten at a Robert St. John restaraunt? He’s got what amounts to a restaurant owners compound in Hattiesburg,  right down the street from the campus of the University of Southern Mississippi.

A rustic Italian spot, a new orleans pub and a southern fine-dining experience,  a super swank cocktail bar, and now, a much anticipated hamburger joint are all within the confines of basically one parking lot. ALL the food at all the places (well, I don’t know about the burger spot yet since the lines have been too long for me to try it out) is really delicious, and the ambiance is always perfectly suited to the cuisine. Anyway, I’m a huge fan, especially since his food is great, AND uses his platform to support hunger initiatives in Mississippi.

He also has some pretty lovely cookbooks, and we were leafing through the Italian one, and ran across a recipe for white beans. My dad has basically been talking about wanting a bean dish for DAYS, since it’s what he wants to eat in cold weather, AND we had a huge bone-in honebaked ham (and what do you do with a ham bone if you’re from the south? You season something.) I didn’t follow the recipe exactly, and I didn’t have all the things to make his unique seasoning blends and herb blends, so I just kinda went with my gut. What resulted was my take on his already warm, creamy, Mississippified-Italian white bean dish that is PERFECT for a cold, cold night.

Channeling Little Bankok: Collard Greens & Venison Larb

For the past 5 years of  my life, the closest Thai restaurant has been two hours away in Memphis or Jackson. Since this is one of my MOST favorite kinds of food, and we lived around the corner from an AMAZING hole-in-the-wall place in Atlanta where we ate at least once a week, this had been one of the hardest parts of small-town Mississippi life. It meant that I needed to figure out some approximations of my favorite dishes…and I can say that I’ve gotten pretty good at massaman and green curry and larb.
But y’all! NOW, we live 30 minutes from a nice little spot in Hattiesburg, so we can basically eat Thai food whenever the craving strikes. It’s so fantastic.

The Pink 75

I mentioned back after the engagement ice cream party that I would post the recipes for the cocktails we enjoyed… they aren’t particularly southern, but they were pretty delish, so i figured it was worth sharing. The actual drink that I based this on, (the French 75) is a delicious light yellow drink,…not too sweet or fruity that packs a serious punch. (a combination of Gin, Champagne, and a fruit liqueur will do that, you know?) The name, French 75, apparently comes from the gun by the same name and originated just after the turn of the 20th Century and garnered fame as a lovely Champagne cocktail with a strong kick. my friend sam gave my my first French 75 on my 29th b-day at the Giardina’s and then i was reintroduced at my local neighborhood bar a month or so ago. To make my own version a girl-party worthy drinkity-drink, I added some grapefruit juice because nothing says girlie like pink, and served them in my antique champagne saucers. It seemed a little less french at that point, so I took liberties and gave it a new name. it was a big hit… no one wanted the wine or the grenadine-vodka cocktail i concocted once they’d tasted this. Let me know if this hits you as hard as it hit me…

The Pink 75
Makes 1 drink

What you need:
1 oz St Germain (Elderflower Liqueur)
1 oz gin
1 oz fresh lemon juice
Champagne
1/2 tsp sugar or stevia
3 oz Grapefruit juice or better yet, sparkling grapefruit juice
Ice

What you do:
Mix the St. Germain, the gin, the grapefruit juice, the lemon juice, and the sugar together with the ice in a cocktail shaker. Shake, and pour into a martini, tall highball glass, or a champagne saucer and top with the champagne. Garnish with a lemon peel or sugared rim.
