Cous Cous with Peaches, Sweet Corn, and Bacon

Serves: 2-4
- 2 Juice, Ripe peaches, diced
- ¾ Cups of cous cous, cooked to the directions on the box
- 5 slices of bacon, cooked the way you like it
- 1 ear of corn, boiled and cut off the cob
- 1 Tablespoons olive oil + 1 tsp bacon grease
- ¼ onion, minced
- Salt & Pepper to taste
- 3 Tablespoons balsamic vinegar
- 3 basil leaves, chiffonaded (AKA cut into thin ribbons)
- Boil your corn and let it cool. Cut it off the cob.
- Cook the Cous cous according to the directions on the package, fluff with a fork and set aside.
- Bake or fry the bacon, and let cool.
- In a large skillet, add 1 tsp of bacon grease and sautee' the onion until translucent.
- Add in the corn, the bacon, and the cous cous, salt, pepper and balsamic vinegar.
- Add in the peaches and basil and serve.
