What You Need
  • FOR THE SYRUP:
  • 20 Figs, washed and halved
  • 2 Cups Sugar
  • 2 Cups water
  • 1 tsp lemon zest
  • FOR THE COCKTAIL:
  • ¾ Cup Fig Syrup
  • I ounce good Bourbon (or more, you know..I like my bourbon)
  • 1.5-2 Ounces Club soda
  • Figs for Garnish
What to Do
  1. FOR THE SYRUP:√
  2. Combine the sugar and water in a saucepan and bring to a boil.
  3. Add in the Figs and reduce to simmer.
  4. When the mixture has reduced by half, let cool.
  5. Puree the figs and syrup with an emulsion blender
  6. Strain out the excess skin and seeds with cheese cloth or a strainer.
  7. Reserve in a jar for up to 3 weeks
  8. FOR THE COCKTAIL:
  9. In a cocktail shaker, combine the Syrup, ice, bourbon and club soda and shake until the container is frosty. Pour into a double glass and add more ice. Garnish with a Fig.
